Bakery Enclosures

Specially designed for Proofers, Fermentation Rooms, and Retarders

Since 1983 Southeast Cooler has produced over 700 proof and fermentation enclosures that are currently in use throughout the United States as well as worldwide. Because this experience has been used to refine the product for the special needs of the baking industry, these enclosures are the very best available for bakery applications.

Construction

Enclosures consist of individual panels with gasketed tongue and groove edges that lock together at the job site. The panels consist of metal skins laminated to a core of rigid insulation. The locking devices, called camlocks, are manufactured into the edges of the panels. The camlocks draw the panels firmly together and allow the panels to be locked together rapidly with a hex wrench.

Finish

304 Stainless steel is the standard finish, available in 22-gauge #4 polish or 24-gauge 2B finish. The material is stretcher leveled to ensure flatness, and the panels are covered with plastic film to protect the finish during shipping and installation.

Gaskets

Panel gaskets and door gaskets are custom extruded for Southeast Cooler from materials proven to withstand the chemical byproducts of yeast fermentation. The panel gaskets provide a neat appearance at the joint and eliminate the time-consuming process of caulking each joint.

Camlocks

Camlocks are fastening devices built into the edges of each panel. These are constructed by Southeast Cooler entirely of 300 series stainless steel.

Door Units

Standard personnel door units are shipped complete with door leaf and all hardware attached. These door units lock in place just like any other wall panel. Special doors can be ordered as wide as 6 feet by any height that does not exceed the height of the wall panels. Various configurations of lift-out doors are also available.

Self-Supporting

Because of the four-inch thickness and one-piece panel lengths up to 30 feet, the walls are self-supporting, thus eliminating the support structure that was once common on many proofers. Although long roof spans will require auxiliary support at mid-span, the perimeter of the roof is supported by the wall panels.

Speed of Assembly

Because the panels are custom made for the exact enclosure size and because of other features already mentioned such as gaskets, camlocks, and pre-assembled door units, the Southeast Cooler enclosure is fast to put up. On many jobs the time spent unloading the panels and moving them through the bakery exceeds the amount of time required for actual assembly.
